ESSENTIAL INGREDIENTS -- SARDINES & ANCHOVIES




Small oily fish, Sardines are commonly purchased canned (tightly packed in oil or brine); fresh sardines are also available and grilled, pickled or smoked.  Anchovy fillets are preserved and packed in oil or salt in small cans or jars, and are strong in flavor.  Fresh anchovies are much milder in flavor.
