Available in pieces (sticks or quills) and ground, it is one of the world's most common spices and is used as a sweet, fragrant flavoring.  True cinnamon is the dried inner bark of the shoots of the Sri Lankan native cinnamon tree; it is often blended with cassia (chinese cinnamon) to produce "cinnamon" commonly found in supermarkets.
