ESSENTIAL INGREDIENTS -- SAFFRON



The stigma (three per flower) of the saffron crocus.  It imparts a yellow-orange color to food once infused -- use with restraint as too much can overwhelm other flavors.  Quality can vary greatly and the best is the most expensive spice in the world.  Nearly 3/4 of the world's saffron production comes from Spain.
