ZUCCHINI BREAD

ZUCCHINI BREAD 
2 cups self-rising flour
2 cups sugar
2 cups grated zucchini (without peeling)
1 cup vegetable oil
1/2 cup brown sugar
3 eggs
1 cup chopped pecans or walnuts
1 or 2 tsp. cinnamon
1 tsp. vanilla
Grease pans. Mix all ingredients together and bake at 350°F for about 50 minutes. When bread is removed from oven, wrap in aluminum foil or cover with a towel to hold in moisture.Enjoy!!!Makes 2 bread loaves.
