WHAT YOU HAVE PIE

I've posted this recipe before on my Looking Through My Bifocals blog.  It is another of my "go-to" recipes because it is so easy and uses up all my left overs.  It is something I make on my late nights from work.  And believe me when I get home from work at 8:30 p.m. the last thing I want to do is make dinner.  This is so quick and easy.  It comes out a lot (but not exactly) like a quiche.  Try it.  You will like it.  I promise.


WHAT YOU HAVE PIE

Mix 3 eggs, 1 cup of milk, 3/4 to 1 cup Bisquick and whatever you have leftover in the fridge. (I have used onions, mushrooms, broccoli, tomatoes, garlic, green beans, peppers, ham, etc.) Bake at 375 degrees for 35-40 minutes.

I usually mix everything together in my pyrex pie plate and put it in the oven. It's just the right size and that way I have just the pie plate to clean at the end.

When I have a little bit of this, a little bit of that left over, I just put it together in my pie. It's one of Joe's favorites.

  1. This is from my friend, Lynn: Anything with bisquick makes a quiche pie. Try ground meat or turkey, cheese and onion for impossible cheese burger pie.

  3. This sounds delicious! Will give this a try. I dislike leftovers most of the time, but economically, it is bad for me if I don't use them up!
