CROCKPOT BARBECUED CHICKEN

I tried out this recipe and absolutely loved it.  So easy and tastes so good.  I think you will like it too.

CROCKPOT BARBEQUED CHICKEN
Spray your crockpot with a non-stick cooking spray.  Put in two large boneless, skinless chicken breasts.  In a small bowl mix 1 cup of barbecue sauce (whatever your favorite is -- I used Sweet Baby Ray's original), 1/4 cup zesty Italian salad dressing, 1/4 cup brown sugar, and 1 tablespoon Worcestershire sauce.  Pour over chicken breasts.  Cook on high for 6 hours.  (I found I didn't need that long.  The thighs were finished in 4 hours.)  Shred the chicken and serve on rolls.

AU JUS RANCH CROCKPOT ROAST


Au Jus Ranch Crock Pot Roast


This is one of the easiest dishes I have ever made! Perfect to put in the crock pot before you head off to church or a work day.






Ingredients



  • 1 3-pound chuck roast
  • 1 1-ounce packet of dry ranch seasoning mix
  • 1 1-ounce packet of dry au jus gravy mix
  • 6 tbsp. butter
  • 1/3 cup water
  •  

  • The How To:
    • Add 1/3 cup of water into your crock pot then place the chuck roast on top.
    •  Sprinkle the dry au jus mix on top, sprinkle the dry ranch seasoning mix on top of the chuck roast, then place 6 tbsp. of butter on top of the roast.
    • Cook on low for 7-8 hours or until the meat is tender enough to shred.
    • Shred and serve with the gravy.
    • You can serve over mashed potatoes or rice.
    I wanted my roast very tender so I cooked on high for 2 of the hours.

    CROCKPOT HAM, GREEN BEANS AND POTATOES

     

    Ingredients

    2 lbs of fresh green beans

    2 lbs of ham

    4 baking potatoes

    1 small onion

    Directions

    Dice the ham, onion and potatoes. 

    Put everything in the crockpot along with 3 cups of water and season to taste with pepper. 

    Put on low for about six hours.

    SLOW COOKER CHICKEN




    Thanks to the One-Pot Chef for this recipe.

    The One Pot Chef strikes again, this time with a recipe that is sure to become one of your family's favorites. Best of all, it's beyond easy to make, thanks to our favorite kitchen MVP: the slow cooker. If you take five to 10 minutes to prepare the meal in the morning, you can come home to the indescribably sublime scent of waiting-to-be-devoured food. Talk about a win-win situation!
    To make this comforting and savory chicken dinner, you'll need: 
    2 pounds of chicken breast fillets
    1 pound of small red potatoes (quartered)
    1/2 pound of dutch/baby carrots (trimmed and peeled)
    1/4 cup of olive oil
    1/3 cup of freshly squeezed lemon juice
    1 teaspoon of dried oregano
    1 teaspoon of onion powder
    2 teaspoons of crushed garlic
    1 teaspoon of salt
    freshly cracked black pepper to taste
    To begin, combine your olive oil and lemon juice. It's best to perform this step in a container with a spout so that you can pour out the liquid easily later.
    Then, add in all your herbs and spices and stir. Don't be afraid to adjust this part of the recipe to suit your preferences.  

    Next, gently place your boneless skinless chicken breasts into the slow cooker. Be sure to trim off any excess fat. 
    Add in your potatoes next. While you don't necessarily need to keep them all on one side, it makes the final presentation more aesthetically pleasing.  

    Do the same with the carrots. Again, the location doesn't matter, but you will get style points for a beautiful dish. 
    Pour your marinade over the entire dish, taking care to give each component a sufficient amount of sauce.  

    All that's left to do is cook the chicken dinner for 4 hours on high or 8 hours on low. When you take the lid off, you'll be greeted with the heavenly aroma of a home-cooked meal.

    SLOW COOKER LOADED POTATO SOUP

    Slow Cooker Loaded Potato Soup Recipe

    Yield: 8 servings
    Prep Time:30 minutes
    Cook Time:4 hours
    Total Time:4 1/2 hours

    Ingredients:

    3 to 3 1/2 lbs russet potatoes, peeled and diced into 1/2-inch to 3/4-inch pieces (about 7 medium potatoes, 8 - 9 cups)
    1 medium yellow onion, finely diced (1 cup)
    3 (14.5 oz) cans low-sodium chicken broth (this comes to just a tiny bit under 5 1/2 cups)
    1 cup evaporated milk
    Salt and freshly ground black pepper, to taste
    1/3 cup butter
    1/3 cup all-purpose flour
    1/2 cup sour cream
    1 1/2 cups (6 oz) shredded cheddar cheese
    9 oz bacon, cooked and diced or crumbled
    4 green onions, diced

    Directions:

    1. To a 6 or 7-quart slow cooker, add potatoes, onion, chicken broth, evaporated milk and season with salt and pepper to taste. Cover with lid and cook on HIGH heat for 4 hours or LOW heat for 8 hours. To check for doneness, poke a piece of potato with a knife. It if easily slides through, it is cooked.
    2. Ladle out 2 cups liquid from soup mixture in crock pot into a liquid measuring cup, set aside. In a medium saucepan, melt butter over medium heat. Add flour and cook, stirring constantly, 2 minutes. While whisking, slowly pour 2 cups liquid in measuring cup into butter mixture. Pour butter mixture into slow cooker and stir to blend.
    3.If desired, mash potatoes with a potato masher to break down into smaller pieces or use an immersion blender to puree. (High recommended. Be careful when using an immersion blender. If it splatters on you it can be quite hot).
    4.Cover and cook on HIGH heat until thickened, about 10 minutes. Turn heat off (or to warm), stir in sour cream. Serve warm topped with cheddar, bacon and green onions.

    CROCKPOT HAMBURGER STEW

    Ingredients
    • 1 lb Ground Hamburger
    • ½ an Onion, Chopped (you could us more we prefer just a little bit of onion)
    • 1 Bag of Baby Carrots
    • Peeled and cubed potatoes *We used about 7 since they are the kids favorite part
    • Minced Garlic to Taste
    • 6 oz Can of Tomato Paste
    • 3 Cups of water (you could do less if you reduce the amount of potatoes)
    • 1 tsp Salt
    • ½ tsp Pepper
    • 1 tsp onion powder
    • 1 tsp Oregano
    Instructions
    • 1 - Brown the ground beef
    • 2 - Prep all your veggies: Peel and chop potatoes, onions, and carrots.
    • 3 - I sprayed my crock pot with a non-stick spray, you can choose to skip this step if you’d like!
    • 4 - Combine the beef, carrots, potatoes, and garlic in the crock pot
    • 5 - In a separate bowl whisk together the water, tomato paste, and seasonings
    • 6 - Pour the water mixture over the beef mixture in the crock pot and cover with a lid
    • 7 - Cook on low for 6-8 hours until done. Be sure to watch the liquid level for the potatoes to cook all the way. If it gets low before the stew is done cooking be sure to add some more!
    • 8 - Serve with bread bowls or bread

    LAZY DAY BRAISED POT ROAST

    Lazy Day Braised Pot Roast

    4 lb boneless chuck roast, trim fat and blot dry
    ½ tsp salt
    4 large carrots cut into 3-inch lengths
    4 large potatoes, peel and quarter
    1 large onion, quarter
    2 bay leaves
    3 C water
    ½ C cider vinegar
    3 tbsp unsalted butter, softened
    3 tbsp all-purpose flour


    1. Place roast in slow cooker and sprinkle with salt and pepper. Add carrots, potatoes, onion, bay leaves. Pour water and vinegar over meat and vegetables. Cover and cook on LOW for 6 to 8 hours.

    2. Transfer meat and vegetables to heated platter and cover. Turn cooker to HIGH. You will have about 3 cups of liquid. In a small bowl, mash the butter and flour together to make a beurre manié.

      OK this sounds like something Julia Child might use (maybe she did) but it's not hard to do. Beurre manié is just an uncooked paste of flour and butter that thickens the thinnest of sauces. Put equal amounts of soft butter and flour in a bowl or small food processor and use a fork or pulsing motion, to mash together until the mixture forms a semi-firm mass. Add to the hot liquid in the cooker, stir with a whisk until it melts and the liquid thickens. Turn cooker to HIGH re-cover and cook about 10-15 min. Pour over the meat and vegetables and serve the remainder in a bowl

    SLOW COOKER CHEESY BACON CHEX MIX

    Slow-Cooker Cheesy Bacon Chex® Mix

    Prep time:  5 minutes
    Total time:  2 hours 5 minutes
    Servings:  24

    Ingredients:
    3 cups Corn Chex cereal
    3 cups Rice Chex cereal
    2 cups Wheat Chex cereal
    2 cups bite-sized pretzels
    2 cups bite-sized cheese crackers
    1/3 cup bacon-flavored bits
    1/3 cup grated Parmesan cheese
    1/2 cup butter or margarine, melted
    1/3 cup canola or vegetable oil
    1 package (1 oz.) ranch dressing and seasoning mix (milk recipe)

    Directions
    1.  In an oval 5- to 6- quart slow cooker stir together 3 cereals, pretzels, cheese crackers, bacon bits and Parmesan cheese.

    2.  In a small bowl beat together butter, oil and ranch dressing mix until well combined.  Pour over cereal mixture; stir until well coated.

    3.  Cook uncovered on high heat setting for 2 hours stirring every 15 to 20 minutes.

    4.  Spread mixture on ungreased cookie sheet or piece of waxed paper.  Cool 3 to 5 minutes before serving.

    SANDRA LEE'S FIVE-SPICE BEEF STEW

    Taken from the book Celebrity Chefs published by Hearst Books.

    SANDRA LEE'S FIVE-SPICE BEEF STEW
    Total time 8-10 hours
    Makes 6 servings

    2 pounds beef stew meat, cut into 1-inch pieces
    1 pound baby carrots
    2 cans (14.5 ounces each) diced tomatoes with onion and garlic
    3/4 cup reduced-sodium beef broth
    1 tablespoon five-spice powder
    Salt and ground black pepper
    Hot mashed potatoes (optional)

    1.  In a 4- to 5-quart slow cooker, stir together beef stew meet, carrots, undrained tomatoes, beef broth, and five-spice powder until thoroughly combined.

    2.  Cover and cook on LOW heat setting for 8 to 10 hours. Season with salt and pepper.

    3.  Serve with mashed potatoes (optional).

    Each serving:  About 279 calories, 36 g protein, 18 g carbohydrate, 7 g total fat (3 g saturated), 3 g fiber, 97 mg cholesterol, 665 mg sodium.

    EASY CROCK POT ROTISSERIE CHICKEN



    Who doesn't need a quick and easy meal this time of year?  Here's one for you to try.
     
    Easy Crock Pot Rotisserie Chicken
     
    Ingredients:
    1 roasting chicken ( choose one that will fit into your crock pot comfortably, and serve your size family)
    Lawry's Seasoned Salt
    4 -5 aluminum foil balls (or about 4-5 foil covered potatoes, scrubbed clean, or if using foil balls only, make them the size of small potatoes)

    Directions: Crumple up 4-5 foil pieces into balls, or wrap potatoes in foil and place at bottom of crock pot. This will keep the chicken from sitting in it's juices and will make it roast not boil. Plus, if you do it w/ potatoes, you just have to throw together a salad and you're done.
      Rinse chicken and pat dry w/ paper towels. Sprinkle all over generously w/ seasoned salt.
      Place on top of foil balls in crock pot or on the foil covered potatoes.
      Cover and cook on HIGH (very important), for 6 hours or until chicken is done.

    Serve and enjoy!

    SLOW-COOKER CHICKEN PARMESAN WITH PENNE PASTA

    Slow-Cooker Chicken Parmesan with Penne Pasta

    Warmly welcome your family home with the Italian aroma of chicken parmesan slow cooking in the kitchen.

    • Prep Time 15 min
    • Total Time 5 hr 25 min
    • Servings 4

    1 egg
    1/3 cup Progresso™ plain bread crumbs
    1/3 cup shredded Parmesan cheese
    1/2 teaspoon Italian seasoning
    1/4 teaspoon salt
    1/4 teaspoon pepper
    4 boneless skinless chicken breasts (about 1 1/4 lb)
    1 jar (26 oz) tomato pasta sauce
    1/2 cup shredded Italian cheese blend (2 oz)
    2 2/3 cups uncooked penne pasta (8 oz)

    Directions

    • 1 Spray 2- to 3-quart slow cooker with cooking spray.
    • 2 In small shallow bowl, beat egg until foamy. In separate shallow bowl, mix bread crumbs, Parmesan cheese, Italian seasoning, salt and pepper. Dip chicken into egg, then coat evenly with bread crumb mixture; place in cooker. Spread pasta sauce evenly over chicken.
    • 3 Cover; cook on Low heat setting 5 to 6 hours.
    • 4 Sprinkle Italian cheese blend over top. Cover; cook on Low heat setting 10 minutes longer. Meanwhile, cook and drain pasta as directed on package. Serve chicken with pasta.


    Expert Tips


    This dish will quickly become a family favorite. For variety, experiment using different flavors of pasta sauces and serving it with various pasta types.

    Fresh steamed green beans and slices of whole grain bread would round out this meal nicely.

    The penne can be swapped with any of your favorite pastas.

    To complete the meal, serve with fresh steamed green beans and warm chewy Italian bread.

    SLOW-COOKER TANGY ITALIAN BEEF SANDWICHES

    I haven't tried this yet, but I will very soon.  It sounds wonderful.

    10 minutes prep time
    12 hours 10 minutes total time
    12 servings

    Ingredients:

    1 boneless beef sirloin tip roast (3-4 lbs), trimmed of fat
    1/4 cup packed brown sugar
    1 bottle (16 oz) Italian salad dressing
    2 tsp. Italian seasoning
    12 burger buns, split

    Directions:
    • Spray inside of 3- to 4-quart slow cooker with cooking spray. If beef is tied, remove strings or netting. Place beef in cooker. Sprinkle with brown sugar. Pour dressing over beef.
    • Cover and cook on Low heat setting 10 to 12 hours.
    • Remove beef from cooker; place on cutting board. Shred beef, using 2 forks. Return beef to cooker; add Italian seasoning and mix well. Using slotted spoon to remove beef from cooker, fill each bun with about 1/3 cup beef. Serve with remaining juices.
    • Sprinkle hot sandwiches with your favorite shredded cheese and serve with a green salad.
