EASY HOMEMADE APPLESAUCE

Easy Homemade Applesauce

6-8 apples, peeled, cored, coarsely cut up
½ C sugar
¼ C brown sugar
¾ to 1 C water
½ tsp nutmeg
½ tsp cinnamon (to taste)
Cinnamon stick broken up - optional (wondered what to do with these)
½ C cranberries - optional (had some frozen)

Put all ingredients into a heavy duty pot, bring to a boil, reduce heat and simmer for 15-20 minutes. I used a potato masher to mash the apples and cranberries as they cooked. Remember to remove the pieces of cinnamon stick.

ALL AMERICAN APPLE PIE

ALL AMERICAN APPLE PIE 
1 c. sugar
2 tbsp. flour
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. salt
1 tsp. lemon juice
5 c. thinly sliced apples
2 tbsp. butter
Pastry for 2 crust 9 inch pie
 
Combine sugar, flour, spices, salt and lemon juice. Add apples, toss to mix. Roll out pastry. Line pie pan. Roll pastry for top. Cut vents near center. Add half the apples. Pack well. Dot with butter. Add remaining apples. Moisten rim with water. Adjust top crust. Seal rim by pressing together. Brush with milk. Bake at 400 degrees for 50 to 60 minutes or until apples tests done with fork.

APPLE PIE GRAHAM CRACKERS

OK, you can't get any easier than this one.  It's the perfect snack for kids or adults.



Apple Pie Graham Crackers
Ingredients:
2 sheets graham crackers (she used honey graham)
1/4 cup light cream cheese
1/2 cup diced apples in 100% juice, drained (Dole makes these)
2 teaspoons cinnamon

Directions:
Add cinnamon to drained apples and mix.

Break each sheet of graham cracker in half and spread with 1 tablespoon cream cheese on each piece.  Top with apples and enjoy!

APPLE CAKE

I made this for Coffee Hour at church a couple of weeks ago.  Usually I bring some home.  This week there was none left.  When everyone raves over something I make, you know I will be making it again.



APPLE CAKE
3 cups all-purpose flour
2 tsp. ground cinnamon
1 tsp. baking soda
1 tsp. salt
1 cup unsalted butter, softened (I used margarine)
1/4 cup vegetable oil
2 cups sugar
2 tsp. vanilla extract
3 large eggs
3 large or 4 medium apples, peeled and cut into a 1/2-inch dice (I used Gala, but the recipe says to use Mutsus, Winesaps, Empires or Granny Smith)
Cinnamon sugar

1.  Heat oven to 350*F.  Grease a bundt pan.  Sprinkle bottom with cinnamon sugar and set aside.

2.  In a bowl whisk together flour, cinnamon, baking soda and salt; set aside.  In an electric mixer cream together butter, oil, sugar and vanilla until light and fluffy, about 2 minutes.  Add the eggs one at a time, beating well after each addition.  Working in two batches, incorporate dry ingredients into butter mixture.  Fold in apples.

3.  Spoon batter into the prepared pan.  Bake until top is golden and a tester inserted in cake's highest point comes out clean, about 1 hour and 10 minutes.

4.  Allow cake to cool in pan for 15 minutes before transferring to a plate.  Sprinkle top with more cinnamon sugar.  Allow to cool completely.
