BEST EVER CREAMY CROCKPOT COCOA

I just saw this on the blog of one of my friends and had to share it.  Thanks Linda at  Me and Mine  for this recipe.


Best Ever Creamy Crockpot Cocoa

Ingredients
1 cup whipping cream
1 14oz can sweetened condensed milk
8 cups milk
1 teaspoon vanilla
2 cups of chocolate chips (I used milk chocolate)
Instructions
Pour all the ingredients into a crockpot and whisk together until well combined. Cover and cook on low for 2 hours, stirring occasionally, until mixture is hot and chocolate chips are melted. Whisk well before serving. Garnish as desired (which means MARSHMALLOWS of course!)

BLACK BEAN BROWNIES

Every few months we have a nutritionist come to the library and do a program.  She makes the most delicious healthy things and then we get to eat them.  These were the last things she did.  They were really good.

BLACK BEAN BROWNIES






Ingredients:

3/4 cup canned black beans, no salt added

1/2 cup unsweetened applesauce 

1/3 cup egg whites

1/4 cup unsweetened cocoa powder

2/3 cup sugar

1 teaspoon vanilla extract

1/2 cup mini chocolate chips, divided

1/3 cup flour

1/2 teaspoon baking powder

1/2 teaspoon salt



Directions:

1.  Preheat oven to 350 degrees F.  Grease a 9x9-inch square baking pan.



2.  In a blender or food processor puree the beans with the applesauce.  Add the egg whites, cocoa, sugar, and vanilla.



3.  Melt half the chocolate chips and add to the blender.  Blend on medium-high until smooth.



4.  In a small bowl, whisk together the flour, baking powder, and salt.  Add to the blender and pulse until just incorporated.  Stir in the remaining chocolate chips.



5.  Pour into the prepared pan and bake until the surface looks somewhat matte around the edges and still a bit shiny in the middle, about 20 minutes.  Let cool at least 15 minutes before cutting and removing from the pan.



Try them.  You will really like them.  I promise.

DR PEPPER CAKE

Do you like Dr Pepper?  Do you like chocolate?  Do you like cake?  Then this is the recipe for you.  I made it for Joe for his birthday one year and he loved it.  I mean LOVED it.  He is a big Dr Pepper fan, but he said you didn't even taste the Dr Pepper.  Just lots of luscious chocolate.  I really have to make this again real soon.

Since Joe is diabetic I used sugar-free cake mix and pudding, and diet Dr Pepper and it still turned out wonderful.



DR PEPPER CAKE


Cake:
1 box German Chocolate Cake mix (I sometimes use devil's food or whatever)
1 box instant vanilla pudding
2/3 cup vegetable oil
4 eggs
1 tsp vanilla
1 can Dr Pepper

Frosting:
1  (8 oz) pkg cream cheese
1 stick butter
1/4 cup cocoa
1 tsp vanilla
1 pound powdered sugar
1 cup pecans

Cake:
Combine first three ingredients, mix well. Add eggs one at a time, beating well after each. Add Dr Pepper, mix well. Pour batter into greased and floured pan. (I use a 9 X 13 inch pan)
Bake at 325 degrees for 35 minutes. Cool in pan before frosting.

Frosting:
Melt butter and beat together with first 5 ingredients until light and fluffy. Mix chopped pecans or you can sprinkle them on top.
  

Hint:  Since Joe and I are lactose-intolerant using a cream cheese frosting just wouldn't work for us so I got a can of sugar free chocolate icing.  So good.  Like a frosted brownie.
